Knowing the internal temperature of meat is a must for Barbecuing. A continuous read is ideal when slow cooking a prime rib, whole chicken, or other large piece of meat or poultry,  because it keeps you informed of the cooking progress and still keep the grill or smoker lid closed, thereby reducing cook time by retaining heat inside the grill or cooker.
